Instructions



1. Heat the vegetable oil in a large pot over medium heat.
2. Add the sliced shallots and chopped garlic to the pot and sauté until fragrant.
3. Add the beef to the pot and stir until the meat is well coated with the shallots and garlic.
4. Add the lemongrass stalks, kaffir lime leaves, bay leaves, and turmeric leaves to the pot.
5. Pour in the coconut milk and water and stir well.
6. Bring the mixture to a boil and then lower the heat to a simmer.
7. Let the mixture simmer for at least 2 hours or until the meat is tender and the sauce has thickened.
8. Stir the mixture occasionally to prevent it from sticking to the bottom of the pot.
9. Once the meat is tender, add salt and sugar to taste.
10. Continue to simmer the mixture for another 30 minutes or until the sauce has thickened even further.
